ซึ่งหลังจากดอกกาแฟออกมาประมาณสี่สัปดาห์ กลิ่นหอมของดอกไม้จะแรงที่สุด ในช่วงที่ดอกไม้บานเต็มที่
วิธีการในการนำดอกกาแฟมาใช้งานคือ เมื่อดอกกาแฟเริ่มที่จะเหี่ยวบนต้นกาแฟ จะทำการเก็บเกี่ยวดอกกาแฟเหล่านี้จากต้น นั่นทำให้การนำไปทำชาจะมีความละเอียดอ่อน มีรสชาติที่หอมหวาน และยังคงมีกลิ่นดอกไม้แบบเต็มที่ แน่นอนว่าการเก็บเกี่ยวนั้น จะสามารถเก็บเกี่ยวดอกกาแฟได้ในสภาพอากาศที่เหมาะสม แต่ถ้าเกิดฝนตกผิดฤดู ดอกกาแฟเปียกชื้นจากฝน ก็จะไม่สามารถเก็บไปทำชาได้อีก หรือถ้าดอกร่วงลงพื้นไปแล้ว เราก็จะไม่เก็บไปทำชาแล้วเช่นกัน
